Zucchini Rounds

6 small grated zucchini
3 eggs
5 scallions, chopped
1/2 cup chopped dill
1/2 cup chopped mint
1/2 cup chopped parsley
1 cup grated cheese
1 1/2 cups flour
salt and pepper to taste
dash of cayenne
1 1/2 cup salad oil

Combine first 7 ingredients; stir in flour. Add salt, pepper, and cayenne. Heat oil until very hot. Drop zucchini mixture by large tablespoons into oil. Brown on both sides and serve with a side of yogurt.
